3 cups Water or broth
1 cup Pinto beans canned, drained, and rinsed
14 oz Tofu extra firm, cut into 1” cubes
1 4 oz can Green chili
⅓ cup Onion diced
½ tsp Sea salt
½ tsp Black pepper
¼ tsp Cayenne pepper

Chile Verde Tofu and Rice recipe

Chile Verde Tofu and Rice is such a quick and easy dish to whip up. The best thing about it is that everything goes into the rice cooker at the same time so you can take care of some other household chores as your dinner cooks!

As I mentioned, to make this dish, all you have to do is place all the ingredients in your rice cooker. Stir to combine the ingredients and turn the cooker to the white rice setting. Cook until the cooker switches to “keep warm” mode. Serve and enjoy!

Steps to make Chile Verde Tofu and Rice

    Place all ingredients in a rice cooker

    Place the rice, water, beans. tofu, chiles, onion, salt, black pepper and cayenne in a rice cooker. Stir well.

    Turn on the rice cooker

    Close the lid of the rice cooker and use the “white rice” setting.

    Cook rice

    Cook the until the cooker switches from “cook” to “keep warm”.

    Serve immediately with some freshly chopped herbs sprinkled on top.
