18 Oreo cookies
4 tbsp Unsalted butter melted
For the chocolate cheesecake
16 oz Cream Cheese softened
½ cup Sour cream
¼ cup Granulated sugar
2 Eggs room temperature
1 tsp Vanilla extract
6 oz Semisweet chocolate melted and cooled
For the chocolate ganache
¾ cups Semi sweet Chocolate chips
¼ cup Heavy cream
For the (optional) topping
shaving Chocolate to taste

My Triple Chocolate Mini Cheesecakes are the most perfect chocolate dessert treats to impress on Valentine’s Day. Is there a more romantic ingredient than chocolate on Valentine’s Day? The answer to that question is a resounding yes and it is triple chocolate! These decadent little cheesecake bites will definitely win the way to your lover’s heart this year.

I use Oreo cookies to make the chocolate base for these mini cheesecakes. For the cheesecake itself, I start by beating cream cheese in an electric mixer. Then I add sour cream, sugar, eggs, vanilla and cooled melted chocolate. I pour the cheesecake mix onto the oreo bases and bake in the oven. Once the mini cheesecakes have cooled, I drizzle chocolate ganache on top and serve with chocolate shavings.

Steps to make Triple Chocolate Mini Cheesecakes

Preheat the oven and prepare a muffin tray

Heat the oven to 325 °F and line a 12 muffin cup tray with silicone/ paper liners.

Make the base

Place 18 oreo cookies in a food processor and pulse until they resemble crumbs. Place the oreo crumbs in a bowl and add 4 tbsp of melted butter. Stir well to combine.

Spoon the base into the muffin cups

Divide the oreo crumb mixture between the muffin cups and press down.

Bake the base

Place the muffin tray in the oven and bake for 5 minutes. Remove from the oven and set aside to cool.

Make the cheesecake mix

Beat 16 oz of cream cheese in a mixer with the paddle attachment. Add ½ a cup of sour cream, ¼ cup of sugar, 2 eggs and 1 tsp of vanilla to the cream cheese and mix until combined. Add 6 oz of cooled, melted chocolate. Mix to combine and scrape down the sides of the bowl as required.

Add cheesecake mix to the oreo bases

Divide the cheesecake mixture between the cooled bases in the muffin tin. Fill the cups almost to the top.

Bake

Bake in the oven for 20 minutes until the cheesecakes are set but still wobble slightly. Cool completely in the muffin tray.

Prepare the chocolate ganache

As the cheesecakes cool, prepare the ganache. Place ¾ of a cup of chocolate chips and ¼ cup of heavy cream in a microwave safe bowl. Heat in the microwave at 15 second intervals until the chips are fully melted. Allow the ganache to rest for about 2-3 minutes.

Top the cheesecakes with ganache

Drizzle 1 tablespoon of the ganache on top of each cheesecake. Use a knife to smooth the top. Place the cheesecakes in the refrigerator to set.

Serve

Serve the triple choc cheesecakes chilled from the refrigerator with chocolate shavings on top.
