1 tbsp Vegetable oil
1 Onion medium, thinly sliced
2 Carrots peeled, thinly sliced
2 stalks Celery thinly sliced
2 cloves Garlic chopped
½ head Napa cabbage chopped
4 cups Vegetable broth low-sodium
2 tbsp Shoyu Japanese soy sauce
2 tbsp Rice vinegar unseasoned
2 tsp Sugar
2 cups Ramen noodles or soba noodles, cooked
Paste (sambal oelek)
fresh leaves Cilantro for serving

    Vegan Shoyu Cabbage Soup recipe

    This delicious vegan ramen style Shoyu Cabbage Soup should be next on your try list. It is so easy to make once you have the right ingredients. You will need Shoyu which is a Japanese soy sauce. You should be able to pick it up at your local Asian grocery store along with sambal oelek, a hot chili paste.

    Start by sautéing onion, carrots, celery, and garlic in a large pot or Dutch oven. Add the cabbage, broth, shoyu, vinegar, and sugar. Bring the soup to a boil and simmer until the vegetables are tender. Serve over noodles, garnished with fresh cilantro. Yum!

    Steps to make Vegan Shoyu Cabbage Soup

      Heat oil

      In a large pot or Dutch oven, heat one tablespoon of oil over medium-high heat.

      Fry onion, carrots, celery, and garlic

      Add a thinly sliced medium onion, 2 thinly sliced carrots, 2 thinly sliced celery stalks, 2 chopped garlic cloves and sauté them for 10–12 minutes, stirring occasionally until they soften.

      Add remaining ingredients

      Add ½ a head of napa cabbage, 4 cups of broth, 2 tablespoons of shoyu, 2 tablespoons of rice vinegar, and 2 teaspoons of sugar. Bring the soup to a boil.

      Simmer

      Once the soup has come to a boil, turn the heat down to low and cover partially with a lid. Simmer for about 7-10 minutes until the vegetables are tender. Taste and add more shoyu if desired.

      Serve

      Serve this delicious shoyu soup over noodles in large bowls, garnished with fresh chopped cilantro.
