Some days a burger is the only option for dinner but I don’t always feel like eating lots of bread. My solution to this problem – Best Iceburgers (Gluten Free)! Iceburgers consist of juicy ground beef burgers, bacon, red onion, cheddar cheese and tomato. All the usual burger ingredients with one key difference – instead of a bun made of bread, I use large slices of iceberg lettuce. They add a freshness and crunch that you can’t get with a regular bread bun!
It’s super easy to make these burgers too. Start by slicing 8 rounds of lettuce from a head of iceberg. Fry the bacon in a skillet until crispy. Fry onion slices in the oil which remains after cooking the bacon. Shape ground beef into patties and season both sides before cooking. For the final minute of cooking, melt cheese on the burger patties. Assemble the iceburgers in iceberg lettuce rounds. Drizzle with ranch sauce and enjoy!
To make the Best Iceburger (Gluten Free) you will need the following ingredients:
To create the “burger buns”, slice eight large rounds from the edges of the head of iceberg lettuce.
Heat a large skillet over medium heat. Place 4 slices of bacon in the skillet and cook until crispy. Drain the excess oil from the bacon on a plate lined with paper towels. Reserve any bacon fat left in the pan.
Place the red onion slices in the skillet and cook for about 2-3 minutes per side until tender. Set the red onions aside and wipe the skillet clean.
Shape 1 lb of ground beef into 4 burger patties. Season on both sides with salt and pepper.
Place the skillet over medium heat. Cook the burgers for about 4 minutes on each side for medium.
Place one of the 4 slices of cheese on top of each burger. Place a lid on the skillet and cook for about a minute until the cheese has melted.
Place each cooked burger on an iceberg round. Drizzle with mayonnaise or ranch sauce and place a slice of bacon, onion and a slice of tomato on top. Drizzle with mayonnaise (or ranch sauce) and top with a second iceberg round.
Serve these iceburgers with french fries or a baked potato.
