Classic Wedge Salad
I love to make this Classic Wedge Salad recipe with a barbecue or a steak dinner. A classic iceberg wedge salad is a combination of flavors and textures – crunchy lettuce, salty bacon and a creamy blue cheese dressing. Unbeatable in my opinion!
This classic wedge salad with blue cheese dressing is so easy to make too. Start by salting tomatoes to remove excess water. Lightly pickle a chopped red onion in vinegar to take the harshness out of it and fry bacon until crispy. Make a blue cheese dressing by blending sour cream, mayonnaise, buttermilk, garlic clove, salt and pepper in a food processor until smooth and then fold in crumbled blue cheese. Assemble the lettuce wedges and top with the dressing, tomatoes, onions and bacon. Serve sprinkled with freshly chopped chives.

5 star salad, I've never had this before today and I actually like it a lot more than ceaser salad.
Not too filling but it was still good, i'd eat it before a bigger meal.

I didn't make the blue cheese dressing since I didn't have much time but it was brilliant on it's own.
I eat this for lunch everyday before I go to the gym since it's so light and quite yummy.
