For the salad
1 head Iceberg lettuce cut into 6 wedges
2 Tomatoes medium
2 tsp Salt
1 Red onion small , diced
1 tbsp Vinegar
1 lb Bacon diced
For the blue cheese dressing
½ cup Sour cream
½ cup Mayonnaise
2 tbsp Buttermilk
½ clove Garlic
½ tsp Salt
½ tsp Black pepper ground
½ cup Blue cheese crumbled
Chives to garnish

Classic Wedge Salad

I love to make this Classic Wedge Salad recipe with a barbecue or a steak dinner. A classic iceberg wedge salad is a combination of flavors and textures – crunchy lettuce, salty bacon and a creamy blue cheese dressing. Unbeatable in my opinion!

This classic wedge salad with blue cheese dressing is so easy to make too. Start by salting tomatoes to remove excess water. Lightly pickle a chopped red onion in vinegar to take the harshness out of it and fry bacon until crispy. Make a blue cheese dressing by blending sour cream, mayonnaise, buttermilk, garlic clove, salt and pepper in a food processor until smooth and then fold in crumbled blue cheese. Assemble the lettuce wedges and top with the dressing, tomatoes, onions and bacon. Serve sprinkled with freshly chopped chives.

Steps to make Classic Wedge Salad

Prepare tomatoes

Chop two medium tomatoes and place them in a bowl. Sprinkle the tomatoes with 2 teaspoons of salt and stir to mix through the salt. Leave to rest for at least 5 minutes. Drain the tomatoes in a sieve to remove excess water.

Marinate onion

Place one diced red onion in a small bowl and pour over 1 tablespoon of vinegar. Toss the onion with the vinegar and leave to rest for 5 minutes.

Cook bacon

Place the bacon in a cold skillet. Heat the skillet over high heat and stir regularly until the bacon is crispy. Drain the bacon on a plate lined with paper towels.

Make the base dressing

Place ½ cup sour cream, ½ a cup of mayo, 2 tablespoons of buttermilk, ½ a garlic clove and ½ a teaspoon each of salt and black pepper in a food processor and blend until completely smooth.

Add blue cheese

Fold in ½ a cup of crumbled blue cheese.

Assemble the salad

Place 6 iceberg wedges on a serving plate. Pour over the blue cheese dressing and top with the tomatoes, pickled onions and crumbled bacon.

Serve

Serve immediately, garnished with a sprinkle of freshly chopped chives.
