
What goes into my Chopped Spring Salad? In a large salad bowl, I toss chopped cucumber, avocado, scallions and radishes with some thinly sliced sugar snap peas and quartered cherry tomatoes for the salad base and make a thick, creamy yogurt dressing combined with olive oil, lemon juice, garlic, spicy sriracha, fresh chives and mint.
I sometimes make extra of the dressing and use it as a creamy dip for dipping my chips in on movie night at home!
To make Chopped Spring Salad, you will need the following ingredients:
In a small bowl, whisk ½ cup of plain yogurt with 2 tablespoons of olive oil, 1 tablespoon of fresh lemon juice, 1 clove of finely grated garlic, ¼ teaspoon of sriracha, 2 tablespoons of finely chopped chives, and 2 tablespoons of freshly chopped mint until well combined then season with some kosher salt and freshly ground pepper. Set aside for 1 hour to marinate.

Made this in the morning and it was very refreshing and goes good with some vinegar on the top too.
Nicely done recipe will be making a lot more things like this, next is the pickled strawberry salad for me though :)
Fast and delicious loved this spring salad.
It's okay but not too filling so it's more of a side dish than lunch or something.
Perfect type of salad to bring to the gym with you it's very light too which is good.
