Tomato Egg Salad
I love to make this Tomato Egg Salad when I am working from home. It’s a treat that I look forward to all morning until my lunch break when I can take a few minutes to switch off from work and to take a few moments of mindfulness as I prepare my meal.
To make this salad couldn’t be easier – I start by boiling the eggs in a large saucepan of boiling water. As the eggs cook, I chop up a tomato and finely slice a clove of garlic and a handful of basil leaves. I mix these together in a bowl. Once the eggs are cooked, peel the shells and chop them. Mix them with the other ingredients. Season with salt and pepper and drizzle some olive oil over the top. Yum!

Not too filling but it's easy to make and really good so i'd recommend it, just maybe have something on the side too.
Needed a tad more salt in my opinion but other than that it was totally perfect.
