This Easy Banana Cake is a delicious cake that you can make with your kids in the kitchen. This recipe is the perfect one to make when you bought too many bananas and they are in danger of going bad. Waste not want not!

It is so easy to make this banana cake too. Start by mashing bananas and sifting flour and baking powder. Beat eggs and add the bananas. Combine the banana mixture with melted butter and sifted flour. Transfer the cake batter to a cake pan and bake until cooked through.

Steps to make Easy Banana Cake

Heat oven and prepare a baking pan

Preheat the oven to 375°F. Lightly grease a square pan or a loaf pan with butter and line the base and sides with parchment paper.

Mash banana and sift flour

Mash the bananas in a small bowl until smooth and set to one side. Sift the self raising flour and baking powder together in a large bowl and set aside.

Beat eggs

Place 3 large eggs in the bowl of a stand mixer and beat on medium speed for 1 minute. Increase the speed to high and beat for 2 more minutes until the mixture is bubbling and foamy.

Add bananas

Add the mashed bananas to the mixer with the egg mixture. Mix gently with a spatula until fully combined.

Add melted butter

Heat 1 stick of butter in the microwave for 20-30 seconds until it melts. Pour half the melted butter into the egg mixture and stir with a spatula until combined.

Add flour and remaining butter in stages

Add ⅓ of the flour and stir until just incorporated. Add the second ⅓ of the flour and stir gently again to incorporate. Add the remaining melted butter and gently mix before adding the remaining ⅓ of the flour until fully dissolved but not overmixed.

Transfer the cake batter to the prepared pan. Bake the cake in the oven for 20-25 minutes until the top is golden brown. Cover with foil and bake for a further 20-25 minutes until a toothpick inserted in the center comes out clean.

Remove the loaf from the oven and cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Cut into pieces and serve.
