These Eggs Mimosa with Olive Paste are a delicious canape to serve with drinks at your next party. The combination of salty green olives with the creamy mayo and egg yolks makes a winning combination for these eggs mimosa!

Start by making a rough olive paste in a food processor or mortar and pestle. Mix with the mayonnaise and chives and set aside. Boil the eggs until cooked, then chill them under a tap of cold running water. Once cool, peel and half the eggs and carefully remove the yolks. Combine the yolks with the olive mayonnaise until you have a smooth mixture. Place the mixture into a piping bag and refill the egg halves. Top each egg half with half an olive serve.

Place 4 eggs in a pot of cold water and bring the water to the boil along with the eggs. Cook for 5 minutes once it comes to a boil. Chill the eggs by running the pot under cold water.
