These Farmer’s Cheese Pancakes (Syrniki) are delicious little pancakes made using fresh crumbly farmer’s cheese. Although farmer’s cheese is quite mild in flavor, it brings a richness to these pancakes which makes them taste absolutely delicious.
Start by making a batter from cheese, egg, flour, sugar, salt and baking powder. Make thick pancakes using your hands and place them into a hot oiled skillet one by one. Make sure your hands are wet throughout the process or the mixture will stick to them. Fry the pancakes on each side until golden brown. Serve with sour cream and jam or fresh fruit or berries.
To make Farmer’s Cheese Pancakes (Syrniki), you will need the following ingredients:
Place 16 ounces of farmer's cheese in a large bowl with 1 egg, ⅓ cup of flour, 2 tablespoons of sugar, ¼ teaspoon of salt and 1 teaspoon of baking powder and whisk until completely smooth with no lumps.
Place 2-3 tablespoons of extra light olive oil in a large non-stick skillet over medium heat.
Use wet hands to shape thick pancakes. Place each one in a skillet one by one. If the cheese mixture starts to stick to your hands, wet them again.
Cook pancakes
Fry the pancakes on one side until golden brown. Flip the pancakes using a spatula or by shaking the pan. Continue to cook until golden brown on the other side.
Transfer the pancakes to a plate and serve warm with sour cream and jam, fresh fruit or berries.
