Healthy Greek Yogurt Zucchini Pancakes
I make these Healthy Greek Yogurt Zucchini Pancakes for family breakfasts on special occasions like birthdays or first day of school holidays. These pancakes are fluffy, light, healthy and they take only a few minutes to prepare which is an added bonus!

To make these, I mix the batter together in stages. Then I simply drop spoonfuls of batter on a hot skillet and there you have it! No waiting for the batter to rest – simply mix (a little) and go!
