2¼ cups Oats gluten free oats, if desired
1¼ cups Coconut milk unsweetened vanilla almond or cashew
1 Bananas large, ripe
¼ cup Maple syrup pure
1 Large eggs
¼ tsp Sea salt
1 tsp Vanilla extract pure
1½ tsp Baking powder
Coconut oil or grass-fed butter, for cooking

Why are these Healthy Pumpkin Pancakes so perfect? They’re quick to make, the recipe is easy to follow and to top it off they’re healthy too! I use gluten free oats with pumpkin, fresh bananas, coconut milk, baking powder and one egg for the batter. Sweeten with maple syrup and flavored with pure vanilla extract and pumpkin pie spice. All natural and where possible, organic.

Prepare batter

In a food processor, blend all ingredients on high for about 1-2 minutes until completely combined and oats have broken down.

Melt butter

Heat griddle over medium-low heat and melt 1-2 teaspoons of oil or grass-fed butter.

Cook pancakes

Once the griddle is very hot, pour ¼ batter onto the center of the pan and cook for 2-3 minutes on both sides. Continue with remaining batter.

Serve

Serve with bananas, fruit, nuts, nut butter, maple syrup or any favorite toppings of your choice.
