Ingredients

For cookies:
½ cup Salted butter softened
½ cup Granulated sugar + an extra 2 tbsp
1 Eggs
1 tsp Vanilla
½ tsp Lemon extract
Zest of 1 Lemon
1 tsp Baking powder
1 ½ cups All-purpose flour
For glaze:
1 cup Powdered sugar
1 tbsp Lemon juice

These Lemon Sugar Cookies are not only quick and simple to make, they taste absolutely delicious too! I love lemon flavored anything – from cakes to cookies and this recipe does not disappoint! Sweet, yet zingy with citrus flavor you won’t be able to stop eating these!

Start by creaming butter and sugar together until light and fluffy. Add egg, vanilla, lemon extract and zest. Scrape the sides and mix again. Stir in the dry ingredients until just combined. Scoop onto prepared sheets and use a cup dipped in sugar to flatten the cookies. Bake in the oven and once cooked, transfer to a wire rack to cool. Make a glaze by stirring powdered sugar and lemon juice together until smooth. Drizzle the lemon glaze over the top of each cookie and wait for it to dry before devouring!

Steps to make Lemon Sugar Cookies

Heat oven and prepare baking sheet

Preheat the oven to 350 °F and line a baking sheet with parchment paper or a silicone mat.

Cream sugar and butter

Place ½ a cup of butter and ½ a cup of sugar in the bowl of a stand mixer. Beat until light and fluffy.

Add egg, vanilla, lemon extract, and lemon zest

Add 1 egg, 1 teaspoon of vanilla, ½ a teaspoon of lemon extract, and the zest of 1 lemon. Scrape the sides and mix again.

Add dry ingredients

Mix in 1 teaspoon of baking powder and 1½ cups of all purpose flour until just combined.

Place cookie mixture on baking sheet

Scoop the mixture onto the prepared baking sheets and use the bottom of a cup dipped in the remaining 2 tablespoons sugar to flatten the cookies slightly.

Bake in the oven for 8-9 minutes.

Leave to cool on the baking sheet for around 2 minutes before transferring the cookies to a wire rack to cool completely.

Make lemon glaze

Stir together 1 cup of powdered sugar and 1 tablespoon of lemon juice until completely smooth. Drizzle over the cooled cookies.

Serve once the glaze has dried.
