To make these cookies, cream butter and sugar and then whip in all wet ingredients. Next, stir in dry ingredients, mixing until a dough forms. To make the Lemon Crinkle Cookies, you will need the following ingredients:
Preheat the oven to 350 °F and grease or line two baking sheets with parchment paper.
In a large bowl, using a hand mixer, cream ½ cup softened butter and 1 cup sugar.
Add in ½ teaspoon vanilla extract, 1 egg, 2 tablespoons freshly squeezed lemon juice, and lemon zest from 1 lemon. Whisk the mixture well to fully incorporate.
In a bowl, mix together 1 ½ cups all-purpose flour, ¼ teaspoon salt, ¼ teaspoon baking powder, and ⅛ teaspoon baking soda.
Add the dry ingredients to the butter mixture and mix until well combined.
Cover the cookie dough with plastic wrap and chill in the refrigerator for a few hours until firm but easy to roll.
Place ½ a cup powdered sugar in a shallow dish.
Remove the dough from the fridge and shape it into 30 walnut-size balls. Roll each dough ball in the powdered sugar and ensure they are coated well. Set them on the prepared baking sheets, spacing them a bit.
Bake the cookies for 12-15 minutes until crinkled and set on top but just barely start to color.
