1/2 lb Italian sausage skin removed
1/3 cup Red pepper roasted, chopped
1/4 cup Basil finely sliced
5 Large eggs
1/4 cup Milk
1 cup Parmesan cheese freshly grated
1/2 tsp Kosher Salt
Black pepper freshly ground, to taste

These breakfast Low Carb Muffin Frittatas is the best morning treat, to start your day. This recipe contains no flour and instead I whisk together some eggs, milk and cheese.

Top each muffin with some Italian sausages, prepared roasted peppers and basil for a fresh flavor and in just 30 minutes, you’ll have prepared your own gourmet breakfast muffins. This is another no leftover recipe too!

Steps to make Low Carb Muffin Frittatas


Preheat oven and prepare a muffin tray

Preheat the oven to 375 °F and spray a 6-cup muffin tray with cooking spray.


Cook sausages


In a large skillet, over medium heat, cook the sausages until golden brown, gently breaking the meat apart with a wooden spoon. Once cooked, drain the meat on some paper towels.


Prepare muffin mix


In a large bowl, lightly mix together the eggs, milk, Parmesan cheese, salt and pepper.


Portion muffins


Portion the mixture between the 6 muffins and top each with the roasted red pepper, sausages and basil.




Bake in the preheated oven, for about 12-15 minutes, until the eggs are set.



Let them cool to a warm temperature before serving.
