Recipe Description

This Spinach Mushroom Strata is a delicious way to use up stale bread. Simply take a day old baguette or loaf of crusty bread, cut it into cubes and toast it in the oven and you are on your way to making this delicious mushroom and spinach casserole. 

Start this dish by toasting stale bread in the oven. Saute mushrooms and onions in a pan with butter. Add spinach and cook until wilted. Combine eggs, milk, cream, salt, pepper, mustard and nutmeg in a blender and blend until combined. Combine bread with mushrooms and onions and transfer to a casserole dish. Pour over egg mixture and cook in the oven until puffed up and golden brown on top.

Steps to make

    Heat oven and prepare casserole dish

    Preheat the oven to 400 °F. Line a 9-inch square or round casserole dish with parchment paper or lightly grease the dish.

    Toast bread

    Place cubed bread on a baking sheet and place in the oven. Toast for about 10 minutes until golden brown. Once toasted, remove from the oven and set aside.

    Saute onion and mushrooms

    Melt 2 tablespoons of butter in a large pan over medium heat. Sauté 1 chopped onion in the pan with 8 ounces of mushrooms and the herbs for around 7 minutes until the vegetables are softened. Add spinach to the pan and cook for 5 more minutes until the spinach is wilted. Remove the pan from the heat and set aside to cool.

    Measure out toasted bread until it fills the dish. Once you have measured this, transfer the same amount back into the empty mixing bowl.

    Add the onion and mushrooms to the bread and add 2 cups of Swiss cheese to the bowl. Toss to combine.

    Turn the oven down to 350 °F.

    In a blender, combine 8 eggs with 2 cups of whole milk, 1 cup of heavy cream, 2 teaspoons of kosher salt, ½ a teaspoon of freshly ground black pepper, 1 teaspoon of Dijon mustard, and ¼ teaspoon of nutmeg. Blend for 10 seconds until combined.

    Assemble the casserole

    Place the bread mixture in the pan. Carefully pour the blended egg mixture over the bread. Press the bread cubes down to make sure they are totally submerged.

    Place the strata in the oven and cook uncovered for 1 hour and 15 minutes.
