For the salad
1 ½ lb Potatoes baby (gold or red potatoes), unpeeled, washed and dried
2 tsp Salt
¼ cup Red onion chopped
¼ cup Parsley fresh chopped
¼ cup Dill chopped
2 tbsp Capers
For the dijon vinaigrette:
⅓ cup Olive oil extra virgin
2 tbsp White wine vinegar
2 tsp Dijon mustard
½ tsp Sumac ground
½ tsp Black pepper
¼ tsp Ground coriander

Mediterranean-Style Mustard Potato Salad is a staple dish on my table all year round. It puts in many appearances because it is just so damn tasty. My whole family loves it. I was delighted when I came up with this recipe because it is so hard to find good vegan potato salad recipe. 

To make this salad, slice the potatoes thinly and cook. While the potatoes are cooking, prepare a simple Dijon mustard vinaigrette. Dress the potatoes while they are still warm so that the flavors mingle. Add the remaining ingredients and there you have it – a simple, delicious potato salad in under 25 minutes!

So, how do you make Mediterranean-Style Mustard Potato Salad?

Steps to make Mediterranean-Style Mustard Potato Salad

Slice the potatoes

Slice the potatoes thinly.

Cook the potatoes

Put the sliced potatoes in a pot. Add water so the potatoes are covered by 1 inch. Bring to a boil. Add salt and turn the heat down. Simmer for about 6 minutes until the potatoes are tender.

Make the vinaigrette

Place the oil, vinegar, mustard, sumac, black pepper and coriander in a small bowl and whisk until fully combined.

Dress the potatoes

Once the potatoes are cooked, remove the pot from the heat and drain. Spread the potato slices out on a baking tray. Pour over the vinaigrette while potatoes are warm. Toss to coat evenly. Allow the potatoes to rest and the flavors to mingle for at least 10 minutes.

Add the remaining ingredients

Add onions, fresh herbs, and capers. Toss gently to combine.

Serve

Serve this salad at room temperature in a large bowl or serving dish.
