To make this salad, slice the potatoes thinly and cook. While the potatoes are cooking, prepare a simple Dijon mustard vinaigrette. Not my personal favorite I think the macaroni salad had a lot more crunch and better texture than this one.

My husband and I wanted to test something different and we came upon this recipe, HUGE win I have to say and it last a really long time in the fridge, taste so good cold.
Brought this in for lunch at work today and everyone was begging me for the ingridents lol.
I don't even consider this a salad,more like a full meal for two or more people but it's totally delicious just very heavy and not too healthy if you're trying to lose weight.
WOW this was so flavorful and actually good even with bacon! (Not a vegan sorry! just had to try this out anyway though).
Really flavorful added a few more things though like some olives and tomatoes.
First time making a mediterranean meal and have to say it was pretty hard for me, usually I can't find the perfect balance between meals but this some how worked out just fine :)
