Start off your Halloween morning in the spirit of the celebration with these Monster Eyes Deviled Eggs. Make your creations look like the real deal with “painted” red food coloring lines onto the white part of the egg to imitate vain-like, bloodshot eyes and place an olive slice on top of the avocado filling for the pupil of the eye.

Prepare eggs

Peel eggs and cut in half, lengthwise then scoop out the center yolks.

Mash filling

In a mixing bowl, mash the egg yolk, avocado and lemon juice together. You can also use a food processor, until smooth. For a more creamy filling, add 1 teaspoon of mayonnaise. Season with salt and pepper, to taste.

Add filling

Spoon the avocado filling to the center of the eggs with a sliced black olive for the “eye.”

Add “bloodshot eyes”

Using a tiny bit of red food coloring and a toothpick, paint the “red bloodshot” part of the eyes onto the eggs.

Serve

Store for up to 6 hours in the refrigerator or until ready to serve.
