It couldn’t be simpler to make these hash brown cups – simply mix all the ingredients together in a bowl. Spoon the mixture into a greased muffin tray and push down using the back of a spoon. Bake in the oven until golden brown and crispy.

Heat the oven and prepare muffin tray

Preheat the oven to 350 °F. Spray a muffin tray with cooking spray.

Combine ingredients

Add 1 bag of frozen shredded hash browns to a mixing bowl with 1 bunch of chopped scallions, 1 teaspoon of salt, 1 teaspoon of garlic powder, ½ a teaspoon of fresh ground black pepper, 1 cup of grated Parmesan cheese, and 2 tablespoons of olive oil.
