I love to make this Pea Shoot Savory Pancakes when it is pea shoot season. These pancakes are super fresh and delicious. I love to make them as a healthy Spring meal. The pea shoots add a fresh flavor and green tint to these pancakes.
Start the pancakes by making a batter by blending eggs, cottage cheese, olive oil, flour, garlic, lemon zest and salt. Pulse in pea shoots and chives. Cook the pancakes in batches on a greased skillet until all the batter is used up. Serve warm and enjoy!

These are really good for you and honestly think it's better than pancakes with maple syrup since atleast you won't get a cavity from these.
