For the salad
- 200 g Smoked salmontorn into strips
- 1 large Fennel bulbtrimmed, cored, halved and finely sliced into strips
- 50 g Arugula
- 200 g Strawberriesripe, hulled and halved
For the dressing
- 4 tbsp Olive oil
- 2 tbsp White wine vinegar
- 2 tsp Whole grain Dijon mustard
- 1 tsp Honeyrunny
To serve
- Crusty Brown Rolls
Salmon, Strawberry & Fennel Salad
I love to make this Salmon, Strawberry & Fennel Salad for a healthy summer lunch! This is one of my working from home favorites as I can pull the whole dish together in only 5 minutes. I love the combination of oily smoked salmon, sweet strawberries and crunchy fennel bulb. It sounds unusual, but it tastes amazing!
To make this salad, whisk together olive oil, vinegar, mustard and honey. Season to taste and set to one side. Place the smoked salmon, fennel, arugula and strawberries into a serving bowl and toss lightly. Drizzle the salad with the dressing and toss until all ingredients are evenly coated. Finish with a crack of black pepper and serve with fresh crusty rolls.
