Ingredients

For the salad
200 g Smoked salmon torn into strips
1 large Fennel bulb trimmed, cored, halved and finely sliced into strips
50 g Arugula
200 g Strawberries ripe, hulled and halved
For the dressing
4 tbsp Olive oil
2 tbsp White wine vinegar
2 tsp Whole grain Dijon mustard
1 tsp Honey runny
To serve
Crusty Brown Rolls

I love to make this Salmon, Strawberry & Fennel Salad for a healthy summer lunch! This is one of my working from home favorites as I can pull the whole dish together in only 5 minutes. I love the combination of oily smoked salmon, sweet strawberries and crunchy fennel bulb. It sounds unusual, but it tastes amazing!

To make this salad, whisk together olive oil, vinegar, mustard and honey. Season to taste and set to one side. Place the smoked salmon, fennel, arugula and strawberries into a serving bowl and toss lightly. Drizzle the salad with the dressing and toss until all ingredients are evenly coated. Finish with a crack of black pepper and serve with fresh crusty rolls.

Steps to make Salmon, Strawberry & Fennel Salad

Prepare dressing

Place 4 tablespoons of olive oil, 2 tablespoons of white wine vinegar, 2 teaspoons of whole grain mustard and 1 teaspoon of runny honey in a small bowl. Whisk to combine and season to taste with salt and pepper.

Assemble salad

Place 200 grams of smoked salmon, 1 sliced fennel bulb, 50 grams of arugula and 200 grams of strawberries in a salad bowl and toss lightly.

Dress salad

Drizzle the salad with dressing and toss to evenly coat the salad ingredients.

Serve

Crack black pepper over the salad and serve with fresh crusty rolls.
