
I love to make this Salmon, Strawberry & Fennel Salad for a healthy summer lunch! This is one of my working from home favorites as I can pull the whole dish together in only 5 minutes. I love the combination of oily smoked salmon, sweet strawberries and crunchy fennel bulb. It sounds unusual, but it tastes amazing!
To make this salad, whisk together olive oil, vinegar, mustard and honey. Season to taste and set to one side. Place the smoked salmon, fennel, arugula and strawberries into a serving bowl and toss lightly. Drizzle the salad with the dressing and toss until all ingredients are evenly coated. Finish with a crack of black pepper and serve with fresh crusty rolls.

Looks and taste wonderful came out exactly like the image and took less than 10 minutes to make.
Too much olive oil you only need about 2tbsp for one bowl, good receipe otherwise.
Will be making this again it's the perfect salad for a lactose intolerant person like myself who's trying to go on a decent diet but still have tasty food!

My kids hate anything with salmon so it was a no go for them, even when I told them theres only strawberries they good strongly taste the salmon..wish there was a way to make it less--fishy for them.
