I am so happy to bring this Strawberry Pavlova recipe to you today because Pavlova is my number one favorite dessert to both make and eat. I love to make a crunchy sweet meringue base and pile it high with whipped cream and fresh strawberries. It’s a dessert which just screams summer to me.

Start by making the Pavlova meringue base. This takes one hour to cook and then you have to wait until it cools down completely in the oven which can take another couple of hours. Make a strawberry sauce by combining strawberries, redcurrants and sugar and whizzing it until smooth. Beat cream with sugar to make the topping for the Pavlova. Spread the cream over the cooled meringue and add chopped strawberries and redcurrants. Drizzle sauce over the top and enjoy!

Steps to make Strawberry Pavlova

Preheat oven and prepare baking sheet

Heat oven to 200 °F. Line a baking sheet with parchment paper and draw the outline of a 9-inch plate using a pencil.

Beat egg whites

Use a hand mixer to beat 4 egg whites until they form stiff peaks.

Add sugar to make meringue

Whisk in 1 cup of caster sugar, 1 tablespoon at a time, until you have a glossy looking meringue.

Add vinegar, cornflour and vanilla

Mix 1 teaspoon of white wine vinegar, 1 teaspoon of cornstarch and 1 teaspoon of vanilla extract into the meringue.

Bake

Transfer the meringue to the parchment paper and spread it out inside the circle. Make the sides a bit higher than the center to hold the filling. Bake in the preheated oven for 2 hours.

Cool inside the oven

Turn off the heat and leave the Pavlova to cool completely inside the oven for about 6 hours.

Make strawberry sauce

Chop 100 grams of the strawberries and combine them with 100 grams of the redcurrants and 2 tablespoons of confectioners’ sugar. Place the berries in a food processor and whizz until smooth. Press the fruit mixture through a sieve so that you are left with a smooth sauce.

Make filling

Whip 350 milliliters of double cream with the remaining 1 tablespoon of confectioners’ sugar and spread the whipped cream over the meringue. Place the remaining strawberries and redcurrants on top of the cream.

Serve

Drizzle strawberry sauce over the Pavlova before serving.
