1 cup Cherry tomatoes halved or quartered
½ Red onion diced
1 Persian cucumbers diced
½ cup Olives Kalamata or green, or both, pitted
⅓ cup Feta cheese vegan if needed
⅓ cup Parsley chopped, or basil leaves
½ tsp Sumac
½ tsp Aleppo pepper
2 tbsp Olive oil extra-virgin
