Ingredients

For caramelized onions:
14 oz Red onion finely diced, about 6 small onions
1 tbsp Butter
1 tbsp Brown sugar
1 tbsp Balsamic vinegar
Salt to taste
Black pepper to taste
For hummus:
1 (14-oz) can Chickpeas
Chickpea brine â…“ cup or as needed
3 tbsp Olive oil extra-virgin, plus extra for serving
2 tbsp Tahini
1 Lemon juiced
1 clove Garlic
½ tsp Cumin
½ tsp Salt or to taste
¼ tsp Black pepper or to taste
Fresh thyme eaves, for serving

Packed with protein and high in fiber, it is healthy, too. The caramelized onions bring a sweet and slightly tangy flavor, which compliments the nutty flavor of hummus so well. You get the classic hummus flavors with tahini, olive oil, and lemon juice, while a dash of cumin brings it all together. Serve with pita and veggies for a healthy and satisfying appetizer.

If you’d like to learn how to caramelize the onions, here’s a wonderful place to start. Melt the butter over medium heat in a large skillet. Add the red onions and cook, stirring occasionally, until the onions are translucent and start to soften. Add brown sugar, balsamic vinegar, and salt and pepper to taste. Reduce the heat to low, and cook until the onions are browned and sticky, 15 minutes. If the onions start to char, lower the heat. Blend the caramelized onions into hummus, reserving some for garnish.

Cook onions

In a non-stick pan over medium heat, melt 1 tablespoon butter and add the diced onions. Sauté until the onions start to soften and become sticky, 10-15 minutes.

Add sugar, vinegar and seasonings

Add 1 tablespoon brown sugar, 1 tablespoon balsamic vinegar, and salt and pepper to taste, then reduce heat to low. Cook until the onions are deep golden and sticky, 15 minutes. If the onions start to char, lower the heat.

Combine hummus ingredients

In a food processor, combine the chickpeas, ¼ cup chickpea brine from the can, 3 tablespoons extra-virgin olive oil, 2 tablespoon tahini, lemon juice, 1 garlic clove, ½ teaspoon cumin, ½ teaspoon salt, and ¼ teaspoon black pepper.

Pulse until completely smooth.

Add caramelized onions

Save a few tablespoons of the caramelized onions for garnish. Add the remaining onions to the food processor and pulse until the onions blend in. Add the splash of chickpea brine to thin out if needed.

To serve, spread the hummus in a shallow bowl and top with the reserved caramelized onions, a sprinkle of fresh thyme leaves, and a few drizzles of olive oil. Enjoy with pita and veggies.
