These Chicken Stuffed Mushrooms are such a quick and easy snack to throw together – you can prepare and cook them in under 30 minutes! These mushrooms are perfect for picnics, barbecues and parties! They are always a hit!

To make this tasty dish, start by sautéing mushrooms and onions with butter. Make the filling for the stuffed mushrooms using cream cheese and chicken. Add the sautéed mushroom and onions and spoon into the mushroom caps. Top with mozzarella cheese and bake in the oven until browned on top and juicy.

Steps to make Chicken Stuffed Mushrooms

Preheat oven

Heat the oven to 400 °F.

Prepare mushrooms

Wipe mushrooms with a damp paper towel. Remove the base of each mushroom and scoop out some of the center. Finely chop the stems and the mushroom pieces you've scraped out. Set aside.

Saute mushrooms and onions

Melt 2 tablespoons of butter over medium-high heat. Add the chopped mushrooms and diced onion and saute while stirring frequently for 10-12 minutes, until the onions are soft and beginning to turn golden. Season with ½ teaspoon of salt.

Make filling

Place 8 ounces of cream cheese and 1 can of chicken in a medium bowl. Season with ⅛ teaspoon of freshly ground black pepper. Mash the ingredients with a fork and stir in the mushroom-onion mix.

Fill mushroom caps

Fill each of the mushroom caps with 1 teaspoon of the chicken and mushroom filling.

Top with cheese

Sprinkle grated mozzarella cheese over the top of each stuffed mushroom.

Bake

Bake in the oven for 10-12 minutes until the filling is browned and the mushrooms start to turn juicy.
