1-2 Granny Smith apples chopped unpeeled
1 cup Celery chopped
½ cup Walnuts chopped
½ cup Cranberries dried or dried cherries
½ cup Mayonaise
2 tbsp Plain yogurt
2 tbsp Mustard honey
2 tsp Lemon juice
⅛ tsp Salt
8 slices Bread cinnamon raisin
Green Leaf Lettuce or butter lettuce, to taste

I love a good sandwich recipe, and these Chicken Waldorf Sandwiches are one of my favorites. I love the combination of sweet and savory in this recipe. Cinnamon raisin bread with chicken, apple, celery, and walnut filling. So tasty!

To make this sandwich filling, combine chicken, apples, celery, walnuts, dried cranberries, mayonnaise, yogurt, honey mustard, lemon juice, and salt in a bowl. Mix well and place between two slices of cinnamon raisin bread with some lettuce to make sandwiches. This chicken salad filling will keep in the refrigerator for up to two days, if tightly covered.

Make sandwich filling

Place chicken, 1-2 chopped unpeeled Granny Smith apples, 1 cup chopped celery, ½ a cup chopped walnuts, ½ a cup dried cranberries or dried cherries, ½ a cup of mayo, 2 tablespoons of plain yogurt, 2 tablespoons of honey mustard, 2 teaspoons of lemon juice, and ⅛ teaspoon of salt in a medium bowl.

Mix well. Refrigerate filling at this stage if you are preparing in advance.

Make sandwiches

Assemble sandwiches by spreading filling on one slice of bread. Add some lettuce and top with a second slice of bread.
