¼ cup Chocolate chips melted and cooled 60% cacao Ghiradelli
2 tbsp Cocoa powder unsweetened
2 tsp Pumpkin pie spice
3 cups All-purpose flour
2 tsp Baking powder
1 tsp Salt
Royal icing in a piping bag

Chocolate Pumpkin Cut Out Cookies are my son’s favorite Halloween cookie – I make them for his class Halloween party each year and they always go down a treat! These cookies look like friendly mummies and they are a very instagrammable treat!

I make these using my gingerbread man cookie cutter – I start with a chocolate cookie base flavored with pumpkin spice. Once they are cooked, I pipe on royal icing bandages backwards and forwards and a few diagonal stripes. I pipe on eyes using white icing with black icing dots for the pupils. They really look like mummies in the end!

Steps to make Chocolate Pumpkin Cut out Cookies

Heat the oven and prepare a baking sheet

Preheat the oven to 400 °F. Line a baking sheet with non-stick baking paper.

Cream the butter and sugar

Cream the butter and sugar together in a food mixer.

Beat in the egg, chocolate, cocoa and flavors

Add the egg, pumpkin emulsion, vanilla, melted and cooled chocolate, cocoa and pumpkin spice and beat well.

Add the remaining ingredients

Mix in the flour, baking powder, salt and continue to beat until fully combined.

Roll out the cookie dough

Roll the cookie dough between wax paper or on a lightly floured work surface until the dough is ¼ inch thick. Cut the mummies with a gingerbread man cookie cutter.

Bake

Place on a baking sheet in the oven for 7-9 minutes until the edges of the cookies are firm.

Cool on the baking sheet

Allow the cookies to cool completely on the baking sheet.

Decorate the cookies

Using royal icing in a piping bag, pipe bandages onto the mummies. I go back and forwards with the piping bag and I do some diagonal piping to make them look mummy-like.

Serve

Allow the icing to set, then serve with glasses of milk!
