A quick and fresh, easy to make, Couscous and Cucumber Salad. I am always looking for the easy recipes and this is one of them. Chop up some cucumber and green onions with fresh herbs of parsley and basil well combined in a bowl of cooked couscous with an olive oil and lemon dressing and seasoned with salt and fresh ground black pepper.

The best summer salad that you’ll love as is, or as a side dish to a protein of your choice.

    Cook couscous

    In a medium saucepan, bring 1¾ cup water to a boil. Stir in couscous and remove from the heat, cover and let stand for 5 minutes. Allow to cool to room temperature.
