1/2 cup Millet
1 cup Water
3 tbsp Lemon juice fresh (about 1-2 lemons)
2 tbsp Olive oil
¼ tsp Garlic powder
Salt to taste
Black pepper to taste
1½ cups Parsley leaves, finely chopped
½ cup Fresh mint leaves, finely chopped
1 medium Tomatoes chopped
1 Cucumber chopped
¼ cup Red onion finely chopped

I love this Gluten Free Millet Tabbouleh Salad for a quick work lunch and it’s great because my husband and kids love it too, which is always a bonus.

Vegan and gluten free with nutritious salad ingredients of chopped tomato, onion and cucumber tossed with fresh herbs like parsley and mint and I marinate my tabbouleh in a lemon juice, olive oil, garlic powder, salt and pepper dressing before serving!

Steps to make Gluten Free Millet Tabbouleh Salad

Prepare millet mixture

In a large saucepan, combine ½ cup of millet and 1 cup water and bring to a boil then reduce the heat and simmer, covered, for about 15 minutes until most of the water is absorbed. Remove from heat and set aside for about 2-3 minutes to absorb the remaining water.

Combine dressing

In a small mixing bowl, use a fork to whisk 3 tablespoons of lemon juice, 2 tablespoons of olive oil and ¼ teaspoon of garlic powder until well combined. Season with salt and pepper to your taste preference.

Combine salad

In a large bowl, toss the cooked millet with 1½ cups of finely chopped parsley leaves, ½ cup of finely chopped mint leaves, 1 chopped tomato, ¼ cup of finely chopped red onion and ½ chopped cucumber, if using and combine everything together.

Add dressing

Pour the prepared dressing over the salad and toss to coat and combine. Season with salt and pepper to taste. Refrigerate for about 15-20 minutes to chill and marinate.

Serve

Serve chilled and enjoy!
