Gooseberry Ice Cream

You will absolutely love this Gooseberry Ice Cream if you decide to make it this summer. When we moved into our house, the first things I bought to plant in the garden were some gooseberry bushes. I love gooseberries and they can be so hard to get in stores, but not many people know that they are really easy to grow.

Heat the gooseberries with sugar and water until they begin to break down. Once cool, mix them with cream in a mixing jug. Add sweetener if the mixture is too tangy. Pour the gooseberry mixture into the ice cream maker and let it churn for about 15 minutes. Transfer to the freezer or eat while soft.
