Ingredients

4 Pork chops boneless and thick
2 tbsp Olive oil
3 cloves Garlic chopped
½ onion, Onion chopped
8 oz White mushrooms sliced
½ cup Dry white wine
1 cup Chicken stock
½ cup Heavy cream
Garlic powder to taste
Sea salt to taste
Black pepper to taste
Dried Italian seasoning to taste
sprigs Fresh thyme to taste
For the roux:
3 tbsp Butter
3 tbsp All-purpose flour
½ cup Heavy cream this is in addition to heavy cream in the instant pot

I love any excuse to use my instant pot, so as you can imagine, I love this Instant Pot Pork Chops recipe. You may be wondering what an Instant Pot is? Well wonder no more. An instant pot is a multi-functional appliance that I just couldn’t live without. It is a pressure cooker, slow cooker, saute pan, steamer and rice cooker all in one. In this recipe I describe using the pressure cooker setting. 

Start by seasoning the pork chops. Cook chopped garlic, onion and sliced mushrooms in some olive oil in the Instant Pot. Add white wine and scrape any bits that are stuck to the bottom of the pot. Pour in chicken stock and heavy cream and season well. Add the chops and thyme and cook on high pressure. Thicken the gravy with a flour and butter mixture known as a roux and you’re ready to serve this creamy delicious meal.

Steps to make Instant Pot Pork Chops

Heat Instant Pot

Turn your Instant Pot on to the sauté setting.

Season the chops

Season the pork chops generously on both sides with a seasoning mix of salt, pepper, garlic powder and Italian seasoning.

Add olive oil, garlic, onion and mushrooms

Add 2 tablespoons of olive oil, 3 chopped cloves of garlic, ½ a chopped onion and 8 oz of sliced mushrooms. Cook while stirring until the mushrooms, garlic and onions are translucent.

Deglaze the pot

Pour ½ a cup of white wine into the pot. Stir with a wooden spoon to ensure that no pieces stick to the bottom of the pot and burn during cooking.

Add stock

Pour in one cup of chicken stock, ½ a cup of heavy cream, salt, pepper and Italian seasoning. Stir well to combine. Add the pork chops and thyme sprigs.

Close and cook

Close the lid and cook the contents on the pressure cook or high pressure setting for 8 minutes. Allow a gradual pressure release for 10 minutes before allowing a final release.

Make a roux

Melt three tablespoons of butter in a small saucepan. Whisk in 3 tablespoons of flour, one tablespoon at a time. Pour in ½ a cup of heavy cream and whisk until the sauce is thick.

Thicken the gravy

Remove the pork chops from the Instant Pot. Add the roux and whisk the gravy until it thickens.

Serve

Pour the gravy over the pork chops and serve with mashed potato or steamed vegetables.
