Get out of your chicken dinner rut with this Grilled Pork Chops recipe. My homemade lemon-rosemary dry rub is the secret ingredient in this zippy grilled pork chop recipe. A simple blend of lemon zest, fresh rosemary, salt and black pepper takes this recipe to a new level of deliciousness. 

To make this dish, coat the thick-cut, bone-in pork chops with the rub, which flavors the meat, ensures its juiciness and tenderness. Let them sit with the lemon-rosemary rub for at least one hour at room temperature or even overnight in the fridge. Be sure the pork chops are at room temperature before grilling, and let them rest out of the fridge for an hour or so. It’s important not to overcrowd the grill pan. If needed, cook the meat in two batches.

Make lemon-rosemary rub

Zest 1 small lemon into a bowl. Add 1 tablespoon minced fresh rosemary, 1 teaspoon kosher salt, 1 teaspoon ground black pepper, and 1 tablespoon minced garlic. Using your fingers, rub to combine well. Slice the zested lemon into wedges and set aside for serving.

Rub pork chops

Pat 4 pork chops dry on both sides and rub the lemon-rosemary mixture all over the pork. Cover and let sit for 1 hour at room temperature or place in the fridge overnight. Let the pork chops come to room temperature before cooking.

Cook pork chops

Heat a grill pan over medium-high heat. In batches, place the pork chops on the grill pan. Grill on the first side for 5 minutes, until the pork chop easily releases from the pan. Flip and cook on the other side for 4 to 8 minutes until an instant-read thermometer inserted in the thickest part of the pork chop (don't touch the bone) registers 135 °F.

Let rest

Transfer to a platter, and cover with aluminum foil. Let rest for 10 minutes. The meat will continue to cook, and the temperature will keep rising as it rests. Repeat with the remaining batch.

Serve

Once rested, serve the pork chops hot with the reserved lemon wedges and chopped fresh herbs of choice.
