Be sure the pork chops are at room temperature before grilling, and let them rest out of the fridge for an hour or so. It’s important not to overcrowd the grill pan. If needed, cook the meat in two batches.
To make the Grilled Pork Chops, you will need the following ingredients:
Zest 1 small lemon into a bowl. Add 1 tablespoon minced fresh rosemary, 1 teaspoon kosher salt, 1 teaspoon ground black pepper, and 1 tablespoon minced garlic. Using your fingers, rub to combine well. Slice the zested lemon into wedges and set aside for serving.

Transfer to a platter, and cover with aluminum foil. Let rest for 10 minutes. The meat will continue to cook, and the temperature will keep rising as it rests. Repeat with the remaining batch.
Once rested, serve the pork chops hot with the reserved lemon wedges and chopped fresh herbs of choice.
