½ Red onion thinly sliced
1 tbsp Balsamic vinegar
2 tbsp Brown sugar

6 cups Baby arugula
Fresh thyme leaves, for garnish

Keto Grilled Pork Chops with Plums and Arugula is one of my favorite midweek meals. It’s really healthy and delicious. I truly believe that the only way to serve pork chops is to grill them! Something about the way the edges of the meat crisp up while remaining tender and juicy inside.

Start making this dish by marinating pork chops in red wine vinegar. While the chops do their thing, make the plum and onion topping by gently cooking them with balsamic vinegar and brown sugar. Grill the chops and set them to one side to rest. While they are resting, make the arugula salad. Serve and enjoy!

Marinate the chops

Place the pork chops in a baking dish and pour in ½ a cup of red wine vinegar. Set to one side to allow to marinate.

Heat some olive oil

Heat a tablespoon olive oil in a large pan or skillet over medium-high heat.

Cook the onions and plums

Add the onions and plums to the pan. Cook while stirring for 5 minutes. Add the balsamic vinegar and brown sugar and continue to cook for 5 more minutes, until soft and golden. Remove from the heat and season to taste with salt and pepper.

Heat a grill or grill pan

Lightly oil a grill or grill pan. Place it over high heat.

Season the pork chops

Take the pork from the red wine vinegar. Season both sides with salt and pepper.

Grill

Place the pork chops on the grill for 4 minutes. Flip and cook for another 3-4 minutes. Allow to rest for 5 minutes.

Make a dressing

In a large salad bowl, mix together the Dijon and remaining red wine vinegar. Slowly pour in the remaining olive oil, whisking constantly.

Dress the arugula

Add the arugula to the dressing and mix well to ensure the leaves are evenly coated. Season to taste with salt and pepper.

Serve

Serve the grilled pork chops topped with the plum mixture and thyme leaves. Place a handful of arugula on the side.
