This Sky-High Strawberry Pie is the best and easiest pie dessert there is. In season, I make it almost weekly and my friends and family really love it. The most time needed is really for the chilling time, however besides that everything is quick and easy!
I like to call this Pie – Sky High because it really does fall top of my list of baking recipes.
To make Sky High Strawberry Pie, you will need the following ingredients:
In a large bowl, mash the berries to a portion of 3 cups.
In a large saucepan combine the sugar, cornstarch, mashed berries and water. Bring to a boil at medium heat, continuously stirring for 2 minutes, until thickened.
Pour the strawberry mixture into a large bowl and allow to chill for 20 minutes. Stir the mixture occasionally.
Once mixture is slightly warm, fold in the remaining berries.
Pour the strawberries into the pie crust and allow to chill for a further 2-3 hours.
In a small bowl, whip the heavy cream well, until peaks form, then add the vanilla pudding mix and whip again, until stiff.
Once the pie is completely cooled pipe with the fresh cream around the edge of the pie and decorate individual slices in the center. Serve and enjoy!
