Packed with veggies, red lentils and big flavor, it isn’t one pot, but it is efficient: You’ll sauté the onions, carrots, celery, and garlic before adding them along with lentils, vegetable stock and herbs to the slow cooker. Cook your lentils and veggies low and slow, then add in the lemon zest and juice. Throw together your favorite green salad and that’s dinner.

You can partially blend the soup with a hand blender for a smoother texture or mash it with a potato masher. I prefer to leave my soup on the chunky side, so I just give it a vigorous stir to help break the lentils. This dish is a perfect fit for both vegan and vegetarian diets. Enjoy!

Steps to make Slow-Cooker Red Lentil Soup

Saute onions

Pour the olive oil In a large pan over medium heat, heat 1 tablespoon olive oil and add 2 diced onions. Sauté until softened, about 3 minutes.

Add carrots and celery

Add 2 diced carrots and 2 diced celery stalks and cook for 3 minutes.

Add garlic and rosemary

Stir in 2 finely diced garlic cloves and 2 teaspoons chopped rosemary leaves and cook for another 1 minute.

Put vegetables, lentils, stock, and seasonings in your slow cooker

Add the vegetables, 2 cups red lentils, 8 cups vegetable stock, ½ teaspoon salt, and
¼ teaspoon black pepper to the slow cooker and stir to combine.

Cover with a lid and cook on low for 7 hours or high for 4 hours.

Stir and add lemon zest and juice

Give the soup a vigorous stir and then add lemon zest and lemon juice, and the remaining 1 teaspoon fresh rosemary. Taste and adjust for seasoning if needed. You can blend the soup at this stage if you wish.
