1 medium Red bell pepper sweet , chopped
1 Onion small , chopped
2 tbsp Olive oil
8 slices Italian Bread ½ inch thick
1/2 cup Mayonaise
1 clove Garlic minced
1 cup Smoked Gouda shredded

This Smoked Gouda Veggie Melt is perfect for lunch or a quick dinner. I know some people are really opposed to sandwiches for dinner, but hear me out. These veggie melts are loaded with roasted vegetables which make them healthy as well as delicious! 

Start by roasting mushrooms, broccoli, pepper and onion. While the veggies are roasting in the oven, place Italian bread on a baking sheet and mix some garlic mayo in a small bowl. Spread the mayo  on the bread slices and top with the roasted veggies. Place the melts under a broiler until the cheese melts.

Steps to make Smoked Gouda Veggie Melt

Heat oven and prepare a pan

Preheat the oven to 425 °F and lightly grease a 10x15 inch baking pan.

Roast vegetables

Place 1 cup of chopped mushrooms, 1 cup of chopped broccoli, 1 medium chopped pepper and 1 small chopped onion. Drizzle with 2 tablespoons of olive oil and toss well to coat. Roast in the oven for 10-12 minutes until the veggies are tender.

Place bread on a baking sheet

Place 8 sliced of Italian bread on a separate baking sheet.

Make garlic mayo

In a small bowl, combine ½ a cup of mayonnaise with 1 minced clove of garlic.

Spread garlic mayo on the bread

Spread the garlic mayonnaise on the bread slices.

Assemble the melts

Spoon the roasted vegetables over the slices of bread; sprinkle with smoked Gouda cheese.

Broil the sandwiches

Change the oven setting to broil. Place the bread slices under the broiler for 2-3 minutes until the cheese is melted.

Serve

Serve hot!
