2 pounds Beef stew meat, cut into 1-inch cubes
2 tbsp Canola oil
3 cups Apple cider or juice
1 can (14½ ounces) Beef broth reduced-sodium
2 tbsp Cider vinegar
1½ tsp Salt
¼ to ½ tsp Dried thyme
¼ tsp Black pepper
3 Potatoes medium, peeled and cubed
4 Carrots medium , cut into ¾-inch pieces
3 Celery ribs, cut into ¾-inch pieces
2 Onion medium, cut into wedges
¼ cup All-purpose flour
¼ cup Water
sprigs of Fresh thyme

Steps to make Homemade Apple Cider Beef Stew

Brown beef

In a Dutch oven on medium-high heat, heat oil and brown beef on all sides then drain excess liquid.

Add stew sauce

Add apple cider, beef broth, vinegar, salt, thyme and pepper and bring everything to a boil then reduce the heat and cover with the lid. Simmer for 1¼ hours.

Add vegetables

Add potatoes, carrots, celery and onions and bring pot to a boil again. Reduce heat, re-cover with lid and simmer for another 30-35 minutes until beef and vegetables are cooked and tender.

Thicken

Combine flour and water, then stir into stew until smooth. Finally, bring to a boil and cook for a further 2 minutes, while stirring, until thickened.

Serve

Serve hot with sprigs of fresh thyme, if you wish.
