Drain the potatoes, rinse well and thoroughly pat dry with kitchen towels. Season the potatoes with salt and flavor up with herbs. Layer the fish and potatoes on a large baking sheet and sprinkle with extra salt, dried oregano, and olive oil if needed. Bake for 30 minutes, increasing the oven temperature for the last 5 minutes to brown and crisp the potatoes. Easy!

Preheat the oven to 350 °F.
