1¼ pound Cod wild
1½ tbsp Soy sauce
2 tsp Fresh ginger grated
4 Plums diced
1½ cup Jasmine rice
3 tbsp Olive oil extra-virgin, divided
Kosher Salt to taste
Black pepper freshly ground , to taste
1 clove Garlic minced
½ small Jalapeño pepper minced (optional)
Juice of 1 Lime
1 tsp Sesame oil
1 tsp Honey
⅓ cup Cilantro freshly , chopped
6 wedges of Lime for serving

    This Roasted Cod with Soy Ginger Plum Salsa and Jasmine Rice is one of my favorite home inspired dishes. The tastes and flavors remind me of when I was growing up in China and my mother would make this all the time.

    Combining soy sauce, ginger, and plums to make a fabulous Asian salsa that you can pair with a variety of different proteins and I have chosen roasted cod with fragrant jasmine rice, for this recipe.

    Steps to make Roasted Cod with Soy Ginger Plum Salsa

    Preheat oven and prepare baking sheet

    Preheat oven to 450 °F and line a rimmed baking sheet with parchment or aluminum foil.

    Cook rice

    Clean rice by rinsing through a meshed sieve, with cold running water and then place in a heavy-bottomed pot with 2 cups water. Bring to a boil, then reduce heat and cook, covered, for 15 minutes. Remove from heat and let stand for 10 minutes before fluffing with a fork and seasoning with salt, to taste.

    Season cod

    Place cod fillets on the pre-lined baking sheet and season with salt and pepper, to taste. Drizzle with 1 tablespoon olive oil.

    Bake cod

    Roast cod in the preheated oven for 12 minutes until the fish flakes, easily.

    Prepare salsa

    In a large mixing bowl, mix the ginger, garlic, jalapeño chili, lime, soy sauce, sesame oil, honey and 2 tablespoons olive oil, together.

    Add cilantro and plums

    Once combined, stir in the cilantro and plums and season the salsa with salt and pepper, to taste.

    Serve

    Serve the plum salsa over the oven roasted cod with side portions of jasmine rice and lime wedges for garnishing.
