Keto Low Carb Cauliflower Salad
This Keto Low Carb Cauliflower Salad is my low-carb potato salad without the potatoes! Cauliflower is the most amazing ingredient for helping cut carbs. You can get really creative with cauliflower – I use it as a rice substitute all the time and I’ve even used it in place of a regular pizza base. My kids weren’t too happy with me that night, but I thought it tasted great!
Not only is cauliflower a great carb substitute, it is also super healthy and nutritional. I cut up a whole cauliflower head and cook it lightly until it’s tender. Once the cauliflower has cooled I mix it with the other ingredients in a mayo and mustard dressing. I chill it in the refrigerator for a day before eating it to allow the flavor to develop. This salad is totally delicious – my whole family loves it.

Not much happening in this meal so I'm giving it a 4 for lack of creativity compared to a lot of other things you guys have made but it did have taste so i'll give you that.
Less mayo would've made this a lot better it overwhelmed the dish.
One of my all time favorite cauliflower salad recipes i've ever found online it taste good and is simple to make!
I have never managed to get my kids to eat green peas up until today, they thought this was some type of mac and cheese and devoured the thing whole! Apparently tricking your kids into thinking that healthy food is something tasty works lol!!

Flavorful and scrumptious but I think it couldve been a lot better the texture was just too mushy and there wasn't much of a satifying crunch to it like the American macaroni salad. Nonetheless it had a great taste just needs bit more lovin :)
Dill pickles was a good choice for this salad gives it a crunch and a bit of a zest.
I added a few more things into mine like some green olives, sundried tomatos and parmesan cheese on the top.
This recipe had me sold after I read pickles and bacon.
