Ingredients

1 can (15.5 oz) Black beans rinsed and drained
9 oz Corn kernels cooked, fresh or if frozen, thawed
1 Tomatoes medium, chopped
1/3 cup Onion chopped
1 Scallions chopped
2 tbsp Lime juice
1 tbsp Olive oil
2 tbsp Cilantro fresh, minced (or more to taste)
Salt to taste
Black pepper fresh ground, to taste
1 Avocado
1 Jalapeño pepper (optional), diced

This Low Cholesterol Black Bean Salad is quick and simple recipe for a traditional Southern addition to your menu. A combination of black beans, avocado, tomato, red onion and corn, tossed and marinated in olive oil and lime juice, giving you this fresh salad.

You can add jalapeño chili for that extra bit of spice, if you wish! And of course, everything’s better with avocado, so pop that on top before serving.

Combine salad ingredients, salt and pepper

In a large bowl, combine the salad ingredients with the beans, corn, tomato, onion, scallion, cilantro, salt and pepper.

Add dressing

Squeeze the fresh lime juice to taste and stir in olive oil.
