Lightened Up Mexican Corn Dip

Lightened Up Mexican Corn Dip is a delicious Mexican inspired dip which can be served straight from the pan it was cooked in. Corn dip is one of my favorite things to make and I am always on the lookout for variations on my usual recipe. I like this one because it is not too creamy and it lets the main ingredient shine through.

This dip is simple to make. Start by cooking the corn in a large skillet. Add minced jalepeño and garlic. Remember to remove the seeds from the jalepeño if you don’t like it too spicy. Remove the pan from the heat and once it has cooled down slightly, add the remaining ingredients. Toss the pan to combine all the ingredients. Serve with corn chips or your other favorite dipper. Enjoy!

    Place 1 tablespoon of oil in a large skillet over medium-high heat. Add 5 cups of corn and cook, stirring occasionally, until the corn has turned a bright yellow color and is charred in places.

    Mix in 1 chopped jalepeño pepper and 2 minced garlic cloves. Cook for 1 more minute. Remove the pan from the heat and let it cool for a couple of minutes.

    Add 1 diced avocado, ¼ cup each of minced red onion and chopped cilantro and 3 tablespoons each of Greek-style yogurt and cotija or feta cheese, 1 teaspoon of chili powder and the juice of 1 lime. Toss the pan gently to combine. Taste the dip and season with sea salt, to taste.
