Ingredients

For the Dressing:
½ Avocado ripe
¼ cup Mayonnaise
2 tbsp Lime juice
1 clove Garlic small, grated
½ tsp Salt
¼ tsp Cumin
For the Pasta Salad:
8 ounces about 3 cups Fusilli pasta whole-wheat
1 cup Tomatoes halved grape or cherry
½ cup Black beans canned, rinsed
½ cup Corn fresh or frozen (thawed)
½ cup Cheddar cheese shredded
¼ cup Red onion diced
¼ cup Cilantro chopped fresh

Blend the avocado, mayonnaise, lime juice, garlic, salt and cumin together in a food processor or blender until you have a smooth mixture.

Cook the pasta

Place the pasta in a saucepan of boiling water and cook it according to the package directions.

Drain and rinse the pasta

Drain the pasta and rinse with cold water. Drain again.

Assemble the salad

Place the drained pasta in a large bowl. Mix in the tomatoes, beans, corn, cheese, onion and chopped cilantro.

Dress the salad

Add the dressing and toss well to coat.
