4 ½ cups Rhubarb stalks cut into 1/2-inch pieces
1 ½ cups Strawberries stemmed and sliced
½ cup Sugar
2 tbsp Tapioca flour
1 tsp Grated orange peel
For the cobbler crust:
1 cup All-purpose flour
2 tbsp Granulated sugar
1 ½ tsp Baking powder
¼ tsp Salt
¼ cup Butter cut into cubes
¼ cup Milk
1 Eggs lightly beaten

Flavor rhubarb and strawberries

In a bowl, toss the rhubarb and strawberries with the sugar, tapioca, and orange zest.
Allow to sit, to absorb the flavors for 30 minutes to an hour.

Preheat the oven to 350 °F.

In a medium bowl, whisk the flour, 2 tablespoons sugar, baking powder and salt. Using your fingers, crumble the butter into the flour until coarse crumbs form the size of a pea, or no bigger.

Add milk and egg

Stir in the milk and egg to form a moist texture, making sure to not overmix.

Prepare pie

Place the marinated fruit in a casserole dish and top the strawberry and rhubarb with the crumbled biscuit crumbs, looking like cobbler stones.
