Banana Bread Granola
This easy Banana Bread Granola recipe produces delicious and crunchy granola packed full of wholesome ingredients without a heavy hand of refined sugar. Plus, this pretty and healthy granola is so easy to make.
This is my first time adding raw bananas to granola, and I honestly can’t get enough of the flavor. It tastes just like banana bread and is a perfect option for breakfast with a splash of oat milk, topping yogurt, and even dessert. The recipe is vegan and gluten-free. Start by preheating the oven and mixing the dry ingredients in a large bowl. In a saucepan, warm the coconut oil, maple syrup, and vanilla extract. Remove the saucepan from heat and whisk in the mashed bananas. Pour the prepared mixture over the dry ingredients and mix well. Spread the mixture onto a large baking sheet and bake in the preheated oven until golden brown. Stir the granola once halfway through baking. Finally, remove it from the oven and let the granola cool on the baking sheet. Store in an airtight container for up to a week.
