Sear the beef

Pour the olive oil into your instant pot and turn on the saute function. When the oil starts is hot, add the beef, salt, pepper, and Italian seasoning to taste. Cook until the beef is brown all over.

Add beef broth

Pour the broth into the instant pot and scrape the brown bits from the bottom of the pot using a wooden spoon.

Add remaining ingredients

Stir in the Worcestershire sauce, garlic, onion, carrots, potatoes, and tomato sauce.

Close and cook

Close the lid and steam valve on your instant pot and cook the stew on high pressure for 35 minutes. Allow the pressure to release gradually for 10 minutes before allowing a final quick release.

Thicken the stew

In a small bowl or teacup, mix the cornstarch and cold water together. Stir the mixture into the stew until it thickens.
