2 Large eggs
½ cup Granulated sugar
½ cup, 1 stick Unsalted butter melted and slightly cooled
½ cup Milk
2 tsp Vanilla extract
1 ½ cups All-purpose flour spooned into measuring cup and leveled-off
½ tsp Salt
1 ½ tsp Baking powder
1 cup Apples peeled, cored, and finely diced tart baking apples, from 1 apple, preferably Granny Smith

Cinnamon Swirl Apple Bread

This super-simple Cinnamon Swirl Apple Bread contains a hefty amount of cinnamon and boasts a crisp, sugared top. It’s incredibly moist, tender, and packed with flavor. I love it with Granny Smith apples that are tart and firm and complement the sweetness added from the sugar. Fuji and Honeycrisp apples would be amazing, too. But your favorite baking apple will also do the trick.  

The batter for this recipe is simple and comes together in just one bowl. To start, make the cinnamon sugar and set it aside. Next, beat the eggs and sugar together. Pour in the melted and slightly cooled butter. Then, add in the milk and vanilla, followed by the dry ingredients. Finally, fold in the diced apples. To assemble the bread, spoon some of the batter into your loaf pan and add the cinnamon sugar. Evenly spoon the remaining batter and cinnamon sugar over the top. Run a knife through the batter in a zigzag motion to swirl the batter and the cinnamon sugar together. Bake until golden brown on top and a cake tester inserted in the center of the loaf comes out clean. Remove the bread and let cool before slicing.

Steps to make Cinnamon Swirl Apple Bread

Preheat oven and prepare loaf pan

Adjust oven rack to the middle position and preheat the oven to 350 °F . Lightly coat an 8.5 by 4.5-inch loaf pan with nonstick cooking spray, then press in the parchment paper so that there's overhang on the two long sides and spray lightly with nonstick cooking spray again.

Prepare sugar-cinnamon mixture

In a small bowl, mix together ½ cup light brown sugar and 1 ½ teaspoons ground cinnamon until evenly combined. Set aside.

Beat eggs and sugar

Use a hand or stand mixer to beat 2 eggs and ½ cup granulated sugar on medium speed until pale and creamy, about 2 minutes.

Add butter

With the mixer on low, gradually add ½ cup melted butter.

Add milk and vanilla

Add in ½ cup milk and 2 teaspoons vanilla extract and mix just until evenly combined.

Add dry ingredients

Add in 1 ½ cups all-purpose flour, ½ teaspoon salt, and 1 ½ teaspoons baking powder and mix on low speed until evenly combined.

Fold in apples

Fold in 1 cup diced apples until evenly incorporated.

Assemble

Spoon about ⅔ of the batter into the prepared loaf pan. Sprinkle about ⅔ of the sugar-cinnamon mixture on top.

Add remaining batter and sugar-cinnamon mixture

Spoon the remaining batter over the top, followed by the remaining sugar-cinnamon mixture. Run a knife through the batter in a zigzag motion to swirl the batter and the sugar-cinnamon mixture together once in each direction.

Bake

Bake for about 50 minutes or until the apple bread is golden brown and a cake tester inserted into the center comes out clean.

Cool

Cool on a wire rack for about 30 minutes, then use the parchment to lift the bread out of the pan. Let cool completely on a wire rack for a few hours or overnight.
