Perfect for a party dinner or casual family get-together! For this recipe, I use homemade pumpkin purée, but you can substitute your favorite store-bought brand to save time.

Activate dry yeast

In a bowl, combine 1 cup water with ¼ cup organic or white sugar and 1 tablespoon active dry yeast and stir until the sugar is melted. Place in a warm spot while you proceed with the following steps.

Sift flour

Measure out 5 cups flour and sift in a large bowl. Set aside.

Prepare eggs

In a bowl, combine 2 large eggs and 1 egg yolk.

Add eggs to yeast mixture

Add eggs to the yeast mixture.

Add pumpkin purée and salt

Add in ½ cup pumpkin purée and ½ teaspoon sea salt and whisk until combined.

Add half flour

Using the dough hook attachment on low/medium speed, mix in half flour.

Add butter

Mix in 4 ounces softened unsalted butter.

Add remaining flour

Mix in the remaining flour ½ cup at a time. Mix until the dough is not sticking to the bowl.

Leave to prove dough

Cover the bowl with plastic wrap, make a few holes in the plastic so the dough can breathe, and leave to rise for 1 hour in a warm spot.

Preheat oven

Preheat the oven to 325 °F and line two baking sheets with parchment paper.

Divide dough

Once the dough has tripled in size, gently knock out the air and transfer to a dusted with flour working surface. Roll the dough into a log and divide into 4 equal portions.

Shape dinner rolls

Working with one portion of the dough at a time, roll it into a circle and cut into 12 equal triangles. Roll each triangle starting from the wide side into a croissant-shaped roll.

Glaze dinner rolls

Place the rolls onto the prepared baking sheets. Beat 1 egg white with 2 tablespoon water, and gently brush each roll. Sprinkle with sesame seeds.

Bake the rolls for 17 minutes or until golden.
