You only need nine simple ingredients to make these dinner rolls, and two of them are water and salt. Since all bread machines are a little different, follow the instructions for your own bread machine when adding ingredients, kneading, and timing. These rolls are best if eaten the day you bake them. To make the Yeast Cornbread Dinner Rolls, you will need the following ingredients:
To the bread machine pan, add ⅔ cup cornmeal and ½ cup boiling water. Select the DOUGH cycle and press the START button. Let the bread machine run for 1-2 minutes.
Open the lid and add ½ cup lukewarm milk, 1 teaspoon salt, 1 large egg, 2 tablespoons sugar, ¼ cup cubed butter, 2 ½ cups bread flour, and 1 ½ teaspoons instant dry yeast to the pan. Select the DOUGH cycle and press the START button.
Check the dough after 1 minute, to be sure it is starting to clump together. Check the dough again after 15 minutes. It should stick to the side, then pull away cleanly. If the dough is too wet, add 1 tablespoon of flour at a time. If the dough is too dry add 1 tablespoon of liquid until the dough looks right.
Once the DOUGH cycle has completed and the dough has doubled in size, turn the dough onto a lightly floured surface. Lightly knead the dough to press out any bubbles, then shape it into a smooth ball.
Divide the dough into 24 equally-sized pieces and roll each one into a ball. Place two balls inside each cup of a 12-cup muffin pan. Alternatively, divide the dough into 12 balls and put one ball in each muffin cup or divide between two 8-inch cake pans.
Cover the muffin pan with a kitchen towel and allow to rise in a warm place until almost doubled in size, about 30-45 minutes.
Preheat the oven to 375 ˚F.
Bake the cornbread dinner rolls for 16-18 minutes or until golden brown.
Once baked, transfer to a wire cooling rack to cool. While the rolls are still hot, brush the soft butter over the baked rolls if you’d like a softer crust.
Serve warm and enjoy!
