This Tomato Zucchini Casserole is a super simple meat-free meal that your whole family will enjoy. It is jam-packed with Italian flavors like oregano and basil, which taste fantastic with tomatoes, zucchini, and topped with cheese.

To make this casserole, I start by combining Cheddar, Parmesan, oregano, basil, and garlic. Next, I arrange half of the zucchini slices in a greased pan. Then I sprinkle some of the cheese and herb mixture on top and layer in half of the tomatoes and top with some more cheese mixture. Repeat layers until all the ingredients are used. Make an onion and breadcrumb topping to sprinkle on top of the casserole. Bake in the oven until cooked through and crisp on top. Perfecto!

Steps to make Tomato Zucchini Casserole

Heat oven and prepare baking pan

Preheat the oven to 375 °F. Lightly grease a 9x7-inch pan with butter.

Combine cheese and herbs

Combine 1½ cups grated Cheddar cheese with ⅓ cup of grated Parmesan cheese, ½ a teaspoon each of oregano and basil, and 2 cloves of garlic. Season to taste with salt and pepper, and set aside.

Assemble casserole

Arrange ½ of the zucchini slices in a layer at the bottom of the pan. Sprinkle ¼ of the cheese and herb mixture on top. Place ½ the tomato slices on top and sprinkle with another ¼ of the cheese mixture. Repeat the layers until all of the ingredients are used.

Make bread crumb crust

Melt ÂĽ cup of butter in a skillet over medium heat. Add 2 tablespoons of chopped onion and cook until soft and translucent. Stir in Âľ cup of bread crumbs and cook while stirring until they have absorbed the butter. Sprinkle over the top of the casserole.

Cover the pan loosely with foil. Place the pan in a preheated oven and bake for 25 minutes. Remove the foil and continue to bake for about 20 minutes until the top is crusty and the vegetables are tender.

Serve with a fresh green salad and some garlic bread if you’re feeling hungry!
